recipe: Jonathan kraft
golden delicious apple strudel, serves 8 (2 strudels)

Combine apples, Raisins, Cranberries, Brown
Sugar, Corn Starch and Cinnamon in Large
Mixing Bowl.

Mix thoroughly to ensure no clumps of Brown
Sugar or Corn Starch. Remove packaging from
Phyllo and gently lay out flat. Keep covered with
damp towel if pastry dough is to be exposed for
more than 1 minute...it will dry out very quickly.

Separate and layout 2 sheets of pastry then
brush evenly with clarified butter...any water in
the butter will make it tear. Repeat this process
twice so that you will have 6 layers of pastry...
making sure the bottom stays nice and dry.

about 1/3rd of the way up from the bottom of
the sheets, lay out half of the filling lengthwise
with the measuring cup. Gently pack filling
together to form a "Cigar" Shape. filling
should be about 3 inches in diameter and then
delicately, but tightly, roll the pastry around the
filling into a "Big Cigar".

once rolled, carefully transfer onto cookie sheet
and then generously brush with clarified butter.
Then with a serrated knife, score slice marks
about a half inch deep into the "Cigar" every 2
inches (on a slight bias). Recipe should make 2
nice sized Strudels.

Preheat oven to 350'f and Bake until Golden
Brown...about 25 to 30 Minutes. Remove and
cool briefly. Slice with same knife on scored
marks careful not to tear pastry.
Recently at the TaSTe of St.Louis, where
Jonathan is the the executive Chef
and Culinary Competition Director,
partnered with faRM aiD (the national
support Group for small local farmers;
i.e. Willie nelson and crew) and put on
a cooking competition with a couple of
local farmers. it just so happened that
after the competition, he ended up with
a half of a bushel of beautiful Golden
Delicious apples. hmmm....what to do?
after several minutes of deliberation, he
decided to make his old favorite - Golden
Delicious apple Strudel with Sun Dried
Cape Cod Cranberries and Gold Raisins,
finished with Grand Marnier Caramel
Sauce and vanilla Whipped Cream.
